i think that BENIAMIN KAHAN is the child that signed the album because his name is only one letter off and his birth year would put him in school #5.

I agree that Beniamin Kahan is the student who signed the album for school #5: in 1941, he would have been 11 years old, an appropriate age to be in school #5, as you suggest. I suspect that the spelling difference is a result of transcription between Hebrew and Roman characters. Your intuition was very good.
