Ester would have been her second name but may have been the name she went by. The last name is spelled slightly differently but the "f" is hard to detect in the pronounciation. The date of birth fits with the birthdate range given by the school.

I agree you have found the student who most likely signed this name in the album. As you suggest, the names Appelblat and Apfelblat are very close in spelling (in either German, Polish, or Yiddish) and pronunciation, so we would not be surprised to see these names appear for the same person. In addition, as you correctly suggest, she would have been 14 years old in 1941, the right age to attend school #8b. Nice work!

Lajb Apfelblat is 3 years older than Ester, he lived at both the same addresses as Ester did and due to their close age one could guess they were siblings.

Also see Chana Ruda Apfelblat, born in 1925, Dobrys Apfelblat, born in 1898 (mother?), and Tauba Gitla Apfelblat, born in 1919. They all share the Storchengasse and Hohensteinstrasse addresses, and while the information is not entirely the same (as it is for Lajb and Chana Estera), the similarities make these people too close not to consider as possible family members. (If you look for them under Apfelblatt, with two Ts, you'll find them at Storchen 22 20, the same address as Lajb and Chaja Estera.)
